Strawberry, basil and goats cheese - oh my!

What an incredible combination for a more deliciously incredible salad.

Be sure to use red, ripe strawberries and quality ingredients for the best results.

Perfect as a side salad and the winning dish of any summer party, but be sure to add extra protein and carbohydrates for a full meal.


1 punnet fresh strawberries

2 cups spinach

1/4 mint leaves

Small handful of walnuts

1 -2 teaspoons of honey or maple syrup

1/2 cup goats cheese

1/4 cup chopped fresh basil

1 tablespoon extra virgin olive oil

1 tablespoon thick balsamic vinegar

Salt & pepper


1. Spread the diced strawberries, spinach and mint leaves across a medium serving platter or shallow serving bowl. If the strawberries aren’t sweet enough to your liking, toss them with a bit of honey or maple syrup.

2. Sprinkle the crumbled goat cheese over the strawberries, followed by the chopped basil and walnuts.

3. Drizzle the olive oil and balsamic vinegar on top.

4. Finish off the salad with the salt, a few twists of freshly ground black pepper, and the reserved basil leaves.

TIP: For the most beautiful presentation, serve the salad promptly. Leftovers will keep well in the refrigerator, though, for about 3 days.
